Fajita Friday Quesadillas Recipe Guide

n fajita Friday I suggest you make a quesadilla instead, it is very similar but a great break from the usual.  A quesadilla is similar in steps to making fajitas with just a few easy additional steps.

Ingredients:

  • Large tortilla wraps
  • Boneless, skinless chicken breasts (1.5lbs)
  • 1 green pepper
  • 1 yellow, red or orange pepper
  • 1 tomato
  • Shredded cheese of your choice
  • Sour cream
  • Salsa
  • Fajita/taco seasoning
  • Garlic marinade
  • Sliced jalapeno
  • Cilantro
  • Green onions

Instructions:
  1. Marinate the chicken in the garlic marinade mix for at least an hour and before the hour is up preheat the oven to 400 degrees.
  2. Put the chicken in a tin foiled lined baking sheet and put it in the oven for 20 minutes.
  3. While the chicken is in the oven chop the peppers into strips (Julienne style), chop up the tomatoes into little triangles, dice the cilantro and green onions.
  4. When the chicken is done, remove it from the oven and cut it into slices.
  5. Put a pan (preferably cast iron) on the stove top and heat it up to high. 
  6. When the pan is hot put some oil in it and then put the peppers and chicken into the pan (beware the sizzle and smoke).  You only need to leave it on high for a minute or two, just to get a good sear on the peppers and chicken.
  7. Lower the temperature of the pan to low medium and pour in the fajita seasoning and mix for another 2-3 minutes.
  8. After the chicken and peppers are cooked start to heat up a Forman Grill, a panini press, or another pan on the stove heat up to medium.  
  9. Take one of the large tortilla wraps and fold in half on a plate.  Place some of the chicken and pepper mix, cilantro, green onions, tomato, a slice or more of the jalapeno and shredded cheese.  Fold the clean side of the wrap over the full side and place on the grill, press or pan.The idea behind the quesadilla is to get the cheese to melt so it doesn't need to be on the grill, press or pan too long.  You want to be able to see the cheese is melted and the wrap is crispy.
  10. Remove the wrap and cut it into quarters, serve with sour cream and salsa (for dipping or spreading on top) and enjoy.
