Ingredients
- 1 tablespoon olive oil
- 2 tbsp garlic, minced
- 2 pcs boneless skinless chicken breasts, cut into bite-sized pieces
- 1/2 tbsp kosher salt
- 1/2 tbsp ground black pepper
- 1/2 cup pesto sauce
- 3/4 cup heavy cream
- 1/2 cup Parmesan cheese, grated, plus additional for serving
- 1 cup halved cherry tomatoes
- 1 pack of dry penne pasta noodles
- Fresh basil leaves, for garnishing
Preparation
- Heat a large pot of water to a boil, then season with salt to taste. Cook the pasta according to package directions; drain well.
- While the pasta is cooking, In a large skillet over medium-high heat, heat the olive oil.
- Season the chicken in the pan with garlic, salt and pepper to taste.
- Saute for 3-4 minutes per side and until golden brown and thoroughly cooked.
