Beef Broccoli Stir Fry Recipe


Beef and broccoli is a quick and easy weeknight family meal. Beef, broccoli, and the best stir-fry sauce make this a nutritious meal. It is quick and straightforward to prepare, taking less than 30 minutes. It's also savory, so I'm confident the whole family will enjoy it. The recipe calls for only a few inexpensive ingredients. This recipe is also good for lunches for the next few days if she keeps it refrigerated. It will improve in flavor as it sits in the fridge longer.

BEEF AND BROCCOLI PREPARATION 

Before you begin cooking, make sure you have all of the necessary ingredients on hand. 

BEEF.  You can use flank steak, sirloin steak, or round steak for this recipe. Keep the meat in the freezer for at least 30 minutes before slicing to make it easier and thinner slices. With a sharp knife, cut the flank/sirloin/round steak against the grain. In a mixing bowl, combine the sliced beef, salt, black pepper, and cornstarch. Get all of the slices of beef and marinate them for at least 10 minutes. 

STIR FRY SAUCE and SLURRY. Combine oyster sauce, sherry wine, soy sauce, and beef broth or water in a separate mixing bowl. Set aside after a thorough stirring. In a separate small bowl, whisk together cornstarch and water. 

BROCCOLI. Wash and cut the broccoli head into bite-size pieces. Bring a pot of water to a boil with a steamer tray inside. Then add the cut broccoli and cook until it turns dark green in color. Drain all of the water and wash with cold water. Set aside after that. 

COOK THE BEEF. Preheat a wok pan on high heat. Swirl in the cooking oil to coat the pan. Spread the beef out into a single layer, being careful not to overcrowd it; you can do this in batches. Sear each side of the beef slices for at least two minutes. If you overcook the beef, it will become chewy and tough. The extra liquid should be scooped out. 

COMBINE THE INGREDIENTS. Reduce the heat to low to medium and stir in the garlic and ginger. Cook until it is fragrant. Add the stirfry sauce and cornstarch mixture to the pan. Coat all of the beef slices in the sauce and cook for 2 minutes, or until it thickens. Mix in the broccoli until everything is well combined. Top and swirl oyster sauce on top and garnish with sesame seeds. With hot steamed rice, serve the beef and broccoli stirfry.


INGREDIENTS

  • 2 lbs flank or sirloin steak
  • 1 tsp salt 
  • 1 tsp ground black pepper 
  • 2 tbsp cornstarch 
  • 2 heads broccoli 
  • cooking oil 
  • 2 cloves garlic, minced 
  • tsp ginger, minced
  • 2 tbsp soy sauce 
  • 4 tbsp oyster sauce 
  • 2 tsp sherry cooking wine 
  • 1/2 cup beef broth or water 
  • 2 tsp cornstarch

INSTRUCTIONS

  1. Against the grain, thinly slice the frozen beef and then combine the beef slices, salt, black pepper, and corn starch in a mixing bowl. Marinate the beef slices in the refrigerator for at least 10 minutes. 
  2. Make the stirfry sauce in a separate mixing bowl. Stir together oyster sauce, sherry wine, cooking wine, and soy sauce. Stir together the corn starch with the water or beef broth in a separate small bowl. Place aside. 
  3. Heat a pot of water to a boil. Place the bite-size broccoli pieces in a steamer tray and cook until the color turns dark green. In a colander under cold running water, drain and rinse the cooked broccoli.
  4. Preheat a wok pan on high heat on the stove. Swirl in the cooking oil. Make a single layer with the beef slices. Cook the beef slices for at least two minutes on each side. Extra liquids should be scooped out.
  5. Reduce the heat to low-medium and add garlic and ginger. And continue to cook until it is lightly browned and fragrant. 
  6. To the pan, add the stirfry sauce mixture and the slurry. Simmer for two minutes, or until the sauce thickens and coats all of the beef slices. 
  7. Mix in the cooked broccoli until everything is well combined. 
  8. Garnish with sesame seeds and drizzle with oyster sauce. 
  9. Serve the beef and broccoli stirfry over hot steamed rice.
